Breakfast-skipping days are over, and I can’t think of a better way to get my collagen peptides in! Along with a good night’s sleep and a 15-minute morning walk, breakfast is back in style.

By now, you may know that the goal isn’t just losing weight, but more importantly, nourishing my body. My new rule: if I’m going to eat it, it’s going to work for me.

This oatmeal keeps me satiated, gets those chia seeds busy doing their thing, and gives me the kind of steady energy that helps clear out the morning cobwebs. Before I know what happened, it’s lunchtime—and I haven’t reached for any snacks!

Yes, there’s a long list of ingredients. But it’s worth it.

Once you get used to making my meals, you’ll have these ingredients on hand, too. After a week or so of making this oatmeal, it won’t feel daunting, and you’ll fine-tune it to your liking.

And yes, I use plain rolled oats—the cheapest brand. They do the job, and they’re affordable. Don’t overthink it. Just do it.

Oatmeal that has turned my breakfast skipping right around! This comes with a health-punch, and it's worth it!

Ingredients

  • 1/3 C Plain rolled oats.
  • 1/2 C Water
  • 1/4 C frozen blueberries
  • 1 scoop collagen peptides
  • 1/4 C unsweetened applesauce
  • 1/2 tsp Honey
  • 1 T Raw Walnuts, chopped
  • 1 tsp chia seeds
  • 1 T Milk of choice
  • 1/2 T CEYLON cinnamon - it's all caps for a reason, find it bulk
  • 1 tsp Plain Greek yogurt, optional
  • A pinch of nutmeg, just to be extra

Instructions

  1. In a small saucepan, combine the rolled oats, water, blueberries and applesauce. Bring to a gentle boil over medium heat, then reduce to a simmer. Cook for 3 to 5 minutes, stirring occasionally, until the oats have absorbed most of the liquid and the blueberries are soft and juicy.
  2. While that's heating, mix the 1 T of milk with the 1 tsp of chia seeds to incorporate, set aside.
  3. Remove saucepan from heat. This slight drop in temperature keeps your protein and probiotic additions smooth and intact.
  4. Add the collagen peptides, plain Greek yogurt, Ceylon cinnamon, and nutmeg. Stir vigorously until the collagen is fully dissolved, the yogurt is seamlessly integrated, and the spices are evenly distributed.
  5. Mix in the chopped walnuts and milk chia seed mixture.
  6. Fill your saucepan with warm water right away to prevent the residual oatmeal from caking onto the pan!
  7. Serve and enjoy!

I buy the Sprouts Farmer's Market plain collagen peptides. My naturopathic doctor approved.
