Jeez Cake in a Jar
When you see the “viral” recipes of the generations that are indulging in all the foods you gave up years ago (do I need to name them?), it can either hurt or make your eyes roll. Well, the viral no-cheese cheesecake made me do both!
Having graduated from the Natural Epicurean in Austin, Tx back in 2015— a health-supportive culinary arts school. My instincts automatically go to a healthier version. I will sometimes create the original shared versions just for comparison. But this one— I didn’t bother. I read enough reviews stating it’s good, but not really a comparison to cheesecake. I knew right way, of course not, it’s just Greek yogurt and soggy cookies!
On a mission to feel as good as I can in my mid-life years, chia seeds are readily available in my refrigerator. Full of omega-3, are a good blood sugar stabilizer and have inflammation lowering qualities. Plus, the added Chia-fiber source makes this Jeez cake a winning treat (or shhh! even a quick breakfast on the go!) in my book!

Cheeze Cake in a Jar
The viral no-cheese cheesecake recipe made healthier and way tastier with GF shortbread cookies, Greek yogurt, and chia seeds. The chia seeds is the ultimate hack to get the cheesecake texture!
Ingredients
- 1 Individual Container (~5 oz) plain Greek yogurt
- 1 tsp Honey or Maple Syrup or preferred sweetener
- 2 T Milk of choice, I like Elmhurst Milked Pistachios Vanilla
- 1 T Chia seeds, first mixed with the milk
- 1 tsp Lemon juice, freshly squeezed
- 3 GF Shortbread Cookies, see my Rosemary Sage GF Shortbread Cookies recipe.
Instructions
- Mix the yogurt with the chia seeds & milk. Mix in honey and lemon juice.
- Crumble 1 shortbread cookie into the bottom of a 4 oz mason jar.
- Add the yogurt mixture on top of the crumbled cookie.
- Press in the remaining 2 shortbread cookies vertically into the jar.
- Drizzle with a little more honey, over and refrigerate at least 2 hours, but preferably overnight.

Flavored Greek yogurt and no added sweeteners
I use these cookies instead of store bought Biscoff cookies to make a healthier version the viral faux cheesecake using Greek yogurt. I'll link that recipe soon.
