Salmon & Goat Cheese Toast
The new rule if you’re over 40, and non-negotiable if you’re over 50! Add protein and healthy fats with every piece of toast.
This one is easy to embellish with all your favorite condiments, but for me, I like it simple. It’s how I can be consistent. The drizzle of honey is the icing on the case- I always have it on hand, and it really transforms this into a smooth mouthfeel that brings it altogether— mellowing out the tang of the goat cheese. And then if a special brunch weekend comes along, it’s so easy to spruce these up with capers, a lemon wedge and sliced summer cantaloupe.
At the end of the day, getting the nutrients I need is serious business for all kinds of things like reducing inflammation, increasing quality sleep, and have faster recovery time from work outs. And just having more energy in general to help me get through the day and, Lord knows, I can use all the help I can get to avoid reaching for the snacks.

Adrenal-Calming Salmon & Goat Cheese Toast
Savory, rich and oh so satisfying! This adds the healthy fats, protein and is the perfect breakfast with warmed toast or made ahead to take on the go!
Ingredients
- 1 Slice sourdough bread or 1 split English muffin
- 2 T Goat cheese
- 2 oz Smoked Salmon
- Cherry Tomatoes, halved
- Cracked black pepper and a tiny drizzle of extra virgin olive oil, for topping
Instructions
- Toast your bread which ever method you prefer, I like the air fryer on high broil for 2 mins, but a cast iron skillet or a traditional toaster is fine too.
- Spread warmed toast with the goat cheese.
- Add the smoked salmon.
- Add the halved cherry tomatoes.
- Sprinkle with cracked black pepper and a drizzle of extra virgin olive oil.
